Pepparkakor

Every Christmas my mom makes Pepparkakor (pepper cookie), a Swedish gingerbread. They're my favorite Christmas cookie, so I've started making them too.  I even used the recipe to make our gingerbread houses this year - and it worked great! (Nicole this is especially for you!)

Ingredients:
2/3c brown sugar
2/3c molasses
3/4t. baking soda
1 t. ginger
1 t. cinnamon
1/2 t. cloves
2/3c. butter -room temp
1 egg
4 1/2-5c. flour

Heat oven to 325 F. (If you want a darker cookie use dark molasses and dark brown sugar.) Put butter in a medium sized bowl.

Heat sugar, molasses, and spices over med high.

Once combined add the baking soda.

The mixture will start to foam up. Pour the spice mixture over the butter and stir till melted.  Add egg.  Add flour and knead (the less flour the better as more gets incorporated while you roll it out). 

Roll out and cut. If you get flour on your cookies while rolling, just gently rub it in with your fingertips.

Bake for 8-10min. 

Decorate with piped icing. The cookies last well and taste better with age!
